A Night of Flavour and Connection with A91 Streetfood at Mc Carthy Kitchens

In the heart of Dundalk, something very special is happening. Beneath the surface of the everyday hum, our underground culinary evenings at Mc Carthy Kitchens have become a gathering point for food lovers, makers, and dreamers. Each event brings together people from diverse walks of life, bound by a single thread: a genuine love of food.
Our most recent collaboration was no exception.

We had the privilege of welcoming A91 Streetfood, led by the dynamic and talented Paul White, Head Chef and CEO. Over the course of an immersive evening, Paul took our audience on a journey that was equal parts education, entertainment, and indulgence.
An Immersive Culinary Experience
Paul’s approach to food is nothing short of fascinating. He speaks about cuisine almost anatomically—dissecting the process from sourcing produce to executing the final dish. With the precision of a scientist and the flair of a storyteller, he gave guests a deeper understanding of what goes into creating truly exceptional street food.
Yet, for all his precision and technical detail, Paul never let the energy drop. His quick wit and natural humour kept the room engaged, laughing, and eager for more. It was a performance as much as a lesson—one that left guests not just satisfied but inspired.
A Celebration of Community
The atmosphere in our Dundalk studio was electric. Guests leaned into every word, every demonstration, every tasting. These evenings are about so much more than cooking—they’re about connection. Our audience continues to grow, and with waiting lists now stretching into 2026, the demand speaks volumes about the hunger (quite literally) for authentic, engaging food experiences in County Louth.
Founder and host David Mc Carthy reflects on the success of these gatherings:

The Cuisine: An Oriental Journey
On this occasion, the theme was oriental cuisine, and Paul did not disappoint. From vibrant flavours to stunningly executed dishes, every plate was a testament to his creativity and technical expertise. The audience, of course, lapped it up—both figuratively and literally.
The Bigger Picture
What began as a unique concept is fast becoming a movement. These evenings, born from a passion for food and design, are now proving hugely influential in the local community and beyond. They’re not just events—they’re experiences, moments that linger long after the plates are cleared.
And with more dates scheduled this November (and next November, too), the journey is far from over. Each collaboration brings something new, and each audience leaves with a sense of having been part of something rare, exciting, and memorable.
